    What Are Nitrates

    To understand nitrates, we must also know about nitrites. Let's go into a bit of chemistry. Nitrate contains 1 nitrogen atom bonded to 3 oxygen atoms, whereas nitrite contains 1 nitrogen atom bonded to 2 oxygen atoms

    Nitrates, by themselves, are inert. It is only when they come in contact with the bacteria in the mouth and other body enzymes until they get converted into nitrites.

    Nitrites, in turn, can be converted to nitric oxide or nitrosamines. It is at this stage we either have good news or bad news. Nitric oxide has been found to reduce arterial stiffness and inflammation – thus reducing the risk of heart disease ( 1 )

    Nitrosamines, on the other hand, are found to be potent lung carcinogens. They are found in cigarette smoke too. Animal studies have shown that nitrosamines are closely related to gastrointestinal cancer ( 2 ).

    It is a rather thin line between the conversion of nitrites to nitric oxide and nitrosamines that defines how beneficial nitrates can be. But there is a way to counter this.

    Studies show that nitrites are converted to nitrosamines only when exposed to high heat ( 3 ). This is why most processed meats, including bacon and hot dogs, contain the most nitrosamines (as they are exposed to high heat) ( 4 )

    This is one reason vegetables and fruits, though high in nitrates, are never as harmful as they are not exposed to such high temperatures. But not all foods contain nitrates. We will see what actually do

      • The first step you can take is to reduce your intake of processed meats – as most of them contain added nitrates as preservatives (to prevent them from getting spoiled). Bacon is a meat food that is often preserved using nitrates. So, it's better to go for frozen bacon.

    Although the trend seems to be cooling off, the gluten-free industry is all set to touch $ 7.6 billion in the US by 2020. How is it justified

    What is Gluten

    Gluten is the general name for the different proteins found in wheat, barley, and rye. Gluten helps maintain their shape.

    Wheat is the most commonly consumed gluten-containing grain. Well, what is gluten made of? The two major proteins in gluten are glutenin and gliadin – and gliadin appears to have the most negative health effects of the two (19459007) 2 ), 3 ). concerns about gluten are related to gluten sensitivity.

    What Does Gluten Do To You

    The most common problem associated with gluten is celiac disease. People affected by it can not tolerate even minute amounts of gluten.     Gliadin in gluten was also linked to increased intestinal permeability ( 15 ). This condition is known as leaky gut, in which potentially harmful substances of the intestine tend to leak into the bloodstream – causing major harm

    These adverse effects can be linked to the amino acids in gluten proteins – namely glutamine and proline. The presence of these amino acids makes gluten difficult to degrade. Therefore, they persist in the gastrointestinal tract – possibly triggering the immune system ( 16 ). This is one reason that gluten-free diets may curtail most symptoms of even noncellular autoimmune diseases ( 17 ).

    Research also states that certain individuals experience gastrointestinal and non-gastrointestinal symptoms following the ingestion of wheat. This can be attributed to gluten ( 18 ).

    There is a spectrum of gluten-related disorders completely unrelated to celiac disease. These include asthma, allergic rhinitis, atopic dermatitis, urticaria (round rashes on the skin that itch intensely), and anaphylaxis (19459031) 19 ). Might Aggravate Brain Disorders

    Gluten, in addition to celiac disease, has been linked to other autoimmune diseases. These include Hashimoto's Thyroiditis, multiple sclerosis, and type 1 diabetes ( 26 ), (19459041) 27 ), 28 Wheat germ agglutinin (WGA) is a lectin (a type of protein) present in wheat. Though this is not directly linked to gluten, WGA is a major component of wheat (just like gluten) and may have adverse effects.

    WGA has been found to cause chronic inflammation and other autoimmune diseases. Along with gliadin in gluten, WGA may further increase intestinal permeability and cause worse issues ( 29 ).

    Gluten, a seemingly simple protein, can cause serious harm.

    Following a lifelong gluten-free diet is the only option for patients with celiac disease and individuals who have side effects to gluten. Medicines may become available, but we need to wait for further development ( 30 ).

    But how about individuals who choose to go on a gluten-free diet despite having no problems with gluten? Well, there are few risks.

    • The gluten-free diet (or even special gluten-free cereal products) is often low in fiber, potassium, iron, and zinc 31 )
    • The gluten-free diet can also increase the risk of deficiencies in B vitamins and other trace minerals ( 32 ). Studies have found that gluten-free bakery products were 267% more expensive than their gluten-containing counterparts ( 31 ). Gluten-free products are often high in fat and calories and low in fiber and whole grains ( 33 ). Individuals on the gluten-free diet were found to consume significantly more carbohydrates and fat (and protein) ( 34 ). This can lead to weight gain if proper care is not taken

    Going on a gluten-free diet when gluten is not a problem may lead to detrimental effects. So, we do not recommend that. But if you still want to go ahead, we suggest you have a word with your doctor.

  • What are lectins?

    Lectins have specific carbohydrate-binding proteins that help facilitate communication between body's cells ( 1 ). They are also ubiquitous – found in plants, animals, and even microorganisms

    They also contain nitrogen that is essential for plant growth. The characteristics of lectins that help protect plants can cause problems in human digestion. Lectins resist being broken down into the gut, potentially contributing to the disease. These proteins, when taken in their active state, can cause negative effects ( 2 ).

    The most publicized of these effects are those due to the intake of raw or undercooked kidney beans. These contain phytohaemagglutinin, and lectin that causes red blood cells to clump together. The effects include nausea, an upset stomach, diarrhea, vomiting, and bloating ( 3 )

    Other animal studies have also found that active lectins can interfere with nutrient absorption. This occurs when lectins bind to the cell lines of the digestive tract, disturbing the breakdown and absorption of nutrients (especially calcium, iron, zinc, and phosphorus) ( 2 )

    Lectins bind to cells for long periods, possibly triggering autoimmune responses. Some sources suggest that this may lead to inflammatory conditions such as rheumatoid arthritis and type 1 diabetes ( 4 )

    Does this mean that you have to refrain from having foods high in lectins? We do not exactly recommend that – for reasons we will discuss later in this post.

    What Foods Are High In Lectins? Red Kidney Beans

    As discussed earlier, red kidney beans contain phytohaemagglutinin, and lectin that may cause digestive problems. This is true if you consume the beans in the raw or undercooked form. Raw kidney beans contain 20,000 to 70,000 hau1 of phytohaemagglutinin, while the whole cooked beans contain just 200 to 400 hau ( 5 ).

    In rat studies, phytohaemagglutinin caused mucosal disarrangement and functional impediment of the gut ( 6 ).

    Though other beans contain lectins, the red variety has them in the highest concentrations. Cooking them on high heat can deactivate this lectin

    However, you do not have to give up on legumes like red kidney beans. They have a low glycemic index and work well in preventing type 2 diabetes and cardiovascular disease ( 7 ). Soybeans



    Soybean lectins are also called soybean agglutinins. Like red kidney beans, soybeans are also comparatively high in lectins.

    Studies show that dietary soybean agglutinin may affect the secretion of certain hormones that modulate blood glucose reserves ( 8 ). These studies conducted on rats also showed poor growth of the spleen and kidneys. Although the effects in humans may not be as drastic, caution is recommended

    Other studies also show that soybean agglutinin can negatively impact the intestinal structure, intestinal permeability, intestinal flora, and the mucosal immune system 9 (), (), (), ( 12 .

    Sprouting soybeans was found to reduce the lectin content by 59% ( 13 ). This can work with peas too, which contains phytic acid, and lectin (though not in very high amounts).

    3. Wheat

    Wheat contains a lectin called wheat germ agglutinin ( 14 ). This lectin can alter the intestinal epithelial and bacterial cell function in the human intestines ( 15 ).

    In rat studies, ingestion of wheat germ agglutinin reduced the digestibility and proper utilization of dietary proteins ( 16 )

    In another study, wheat germ agglutinin was found to trigger the synthesis of pro-inflammatory cytokines 17 Lectin activity has also been observed in other cereal grains such as oats, corn, rice and barley – although the most studied is the one found in wheat germ ( 14 ). effects too.     4. Tomatoes

    The use of GMOs (GMOs) is banned in organic food. To meet the USDA organic regulations, farmers are required to show that they do not use GMOs in their produce ( 12 ).

    Although GMOs are not all bad, the topic itself is unclear, GM foods offered on international markets are unlikely to harm human health – thanks to the strict rules 13 ).

    Scientific research tells us that when plants grow organically without the use of synthetic pesticides, their taste is getting stronger. Higher levels of antioxidants (which are characteristic of organic foods) can affect the organoleptic qualities of food – including sensations of aroma, taste and taste.

    What foods should you consume organically?

    Ideally everyone. But there are some foods that, according to research, are more likely to be exposed to harmful chemicals and pesticides during their production.

    According to the Environmental Working Group, an American activist group that specializes in agricultural research and advocates pure nutrition, follow the usual foods that most likely contain pesticides. EWG tagged them as Dirty Dozen *.

    is that conventional varieties of these foods have high concentrations of pesticides. If you need to take these foods, it is best to go for organic varieties.

    The Environmental Working Group also came up with another set of foods called Clean Fifteen whose conventional production has the smallest amount of pesticides **. They include the following:

    If you want to go for these foods, you can choose the conventional variety. Of course, nothing is beating organically. But if you're under budget, it's good to stick to the conventionally grown forms of these foods.

    Fortunately, the USDA (US Department of Agriculture) has set up a program of strict governmental standards that helps us identify almost all organic foods (19459062) 21 ) . These standards also regulate the cultivation, processing and processing of organic production

    Check for their type . Organic foods should look more natural. Ideally they should not be bright and shiny. The more irregular their size, the better. Also, choose seasonal produce.
